'85 Elite 250 luggage options

Looking at a great-condition Elite 250, it already has tail-mount box but I can't seem to find anything about panniers except warnings you shouldn't try anything if you don't want to crack the fairing.

What's the feasibility of keeping the rear fairings off in favour of slapping some hard cases on, mounted to the frame? I'm pretty much sold on this thing except I want to have cargo options :) Never had an Elite before so I apologise if there's some glaringly obvious roadblock I'm unaware of. (Besides cosmetics.)
